Bodegas Hermanos Perez Pascuas employee manages the rack of Chuletillas de cordero al sarmiento, lamb chops cooked of grape vine prunings.May 9, 2022 at Bodegas Hermanos Pérez Pascuas Viña Pedrosa in Pedrosa de Duero in la Ribera del Duero. Lunch with my friend of nearly 40 years Manolo Pérez Pascuas, who insisted on us posing with my book Sunset in a Glass: Adventures of a Food and Wine Road Warrior in Spain Volume I Enhanced Photography Edition in front of the photograph of his late father, Mauro Pérez, who worked these vineyards, now some 120 hectares (about 300 acres) of primo vines growng at an altitude of 800 meters (2600 feet) above sea level.
Manolo provided us with a tour of the bodega, where I have been some 30-40 times, then a superb luncheon in the bodega´s dining room overlooking the family's vineyard and a vast expanse of the eastern Ribera del Duero from the highlands of Burgos province.
Lunch, accompanied by the superb Pérez Pascuas Viña Pedrosa red wines, was ensalada de lechuga, tomate y cebolla, chorizo cooked in vino tinto and baby lamb chops cooked al sarmiento, over grape vine prunings.

More true than Don Quixote's vapouring?
Hath winged Pegasus more nobly trod
Than Rocinante stumbling up to God?

My good friend Gerry Dawes, the unbridled Spanish food and wine

".
. .That we were the first to introduce American readers to Ferran Adrià
in 1997 and have ever since continued to bring you a blow-by-blow
narrative of Spain's riveting ferment is chiefly due to our Spanish
correspondent, Gerry "Mr. Spain" Dawes, the messianic wine and food
journalist raised in Southern Illinois and possessor of a
self-accumulated doctorate in the Spanish table. Gerry once again
brings us up to the very minute. . ." - - Michael & Ariane
